SALT & PEPPER CHICKEN

Salt & Pepper mix:
2 tablespoon salt
1 tablespoon sugar
1 teaspoon Chinese 5 spice 
1 teaspoon white pepper powder

(TO MAKE THE SALT AND PEPPER MIX PUT ALL ABOVE INGREDIENTS TOGETHER IN A CONDIMENT SHAKER OR SMALL BOWL/CONTAINER)

Chicken Batter
1/4 cup plain flour
1 teaspoon of Chinese 5 spice 
1 egg

Salt and Pepper Chicken
One boneless chicken breast
1 red chilli
1 green chilli
1 clove of garlic
Vegetable oil

​How to make it:

1: Combine flour & 5 spice powder in a bowl

2: Whisk 1 egg in a separate bowl

3: Dice Chicken into 1 cm pieces

4: Mix Chicken pieces in with the egg

5: Add chicken pieces to flour mix and coat

6: Heat frying pan and add enough oil to cover base and fry the chicken
for 3-4 minutes on each side. (If you use a deep fryer cook the chicken for 8-10 mins at 170•c) - Once cooked leave to drain on kitchen paper

7: Heat 1 tablespoon of oil in a wok or frying pan on medium heat

8: Chop chilli and garlic, add to pan & fry for 1 minute

9: Add chicken to the pan and mix with the chilli & garlic

​10: Sprinkle with salt & pepper mix serve.
